Over four years ago I began my vegan journey, and during that time I have experimented a lot in the kitchen. I started this blog as a place to share my favorite plant-based recipes – things I make over and over. The goal here is to illustrate how simple it can be to eliminate animal products from your plate, while still achieving a well balanced diet. I choose to stay committed to veganism for the environment, for the animals, and for my health.
If we all went vegan, the world’s food-related emissions would drop 70% by 2050, according to a 2016 report on food and climate in the academic journal, Proceedings of National Academy of Sciences (PNAS). As much as I want the whole world to go vegan, I know that’s unrealistic (at least at the moment). What is doable is educating people so they are more conscious of their consumption and their impact – inspiring action, to opt for meat and dairy free meals a few times a week. Small changes add up over time.
